Sesame seed oil is one of the oldest and most widely utilized edible oils, valued for its unique nutritional composition, rich phytochemical content, and diverse health-promoting properties. This chapter explores the global production and trade of sesame, highlighting the growing importance of sesame seed oil in nutrition and health sciences. Particular emphasis is placed on its bioactive constituents, including sesamin, sesamol, and sesaminol, and their comparison with compounds found in other vegetable oils. The chapter further examines the molecular mechanisms through which sesame-derived compounds influence atherosclerosis, hyperlipidemia, oxidative stress, and inflammatory pathways. In addition, emerging evidence regarding the protective effects of sesamin in nonalcoholic fatty liver disease and the anticancer activity of sesaminol is discussed.
