The general objective of the study is to analyse the production function that best optimises productivity and explain its elasticity of factor substitution in the production of organic quinoa in the Puno region of Peru. The research method is non-experimental, correlational-causal; it uses cross-sectional data collected through surveys; four econometric models are analysed: multivariable linear function, quadratic function, cubic function and the Cobb-Douglas function, the latter being the selected model, which allows the objectives of the research to be achieved and the hypotheses to be tested. Organic quinoa from Puno, Peru, is in international demand in the United States, Canada, Italy, the United Kingdom, among others; this is according to the National Superintendency of Customs and Tax Administration.
