The story begins with an unexpected influence: taxation. A British malt tax encouraged Irish distillers to combine malted and unmalted barley, helping shape a distinctive whiskey tradition. What started as a practical response grew into something far bigger.
By the nineteenth century, Irish pot still whiskey was thriving. Dublin housed enormous distilleries, hundreds of men worked within the industry, and Ireland counted 93 licensed distilleries by 1835. Demand stretched beyond Irish shores, and the future appeared secure.
Then everything began to change.
Temperance challenged drinking itself. The Great Famine devastated Ireland. Aeneas Coffey introduced a faster and cheaper method of distillation, only for Dublin's traditional whiskey houses to reject the resulting spirit as unworthy of the name they had spent generations protecting.
Scotland saw opportunity where Ireland saw compromise.
What followed was a battle over the meaning of whiskey, the rise of blended Scotch, a landmark 1909 ruling, American Prohibition, bootleg liquor disguised behind Irish-looking labels, political upheaval, economic conflict with Britain, and the loss of crucial export markets.
By the mid-1960s, an industry that had once counted dozens of distilleries had been reduced to only three in the Republic of Ireland.
Yet the story did not end there.
