Turkeys occupy a singular place in the history of domesticated poultry. They are among the few major food animals whose domestication unfolded entirely in the Americas and then radiated to the rest of the world through trade and cultural exchange. Understanding that journey sheds light on today's production systems and on the choices modern farmers face when selecting breeds, designing housing, and marketing meat.
Wild turkeys (Meleagris gallopavo) evolved in North America, where they adapted to varied habitats-from hardwood forests and river bottoms to grasslands and scrub. They are social, ground-roosting birds with keen eyesight and strong legs, capable of short, explosive flight. Long before European contact, Indigenous peoples in what is now Mexico and the American Southwest kept turkeys near settlements for meat, feathers, ritual, and pest control. Selective management-controlling breeding access, protecting nests, culling aggressive males-gradually produced domestic lines that were tamer, heavier, and more reliable for food.
Spanish expeditions returning from the Americas carried domesticated turkeys into Europe in the sixteenth century. There, farmers and fanciers accelerated selection for size, breast muscle, and feather color. Within a few generations, turkeys became established alongside chickens and geese on European smallholdings. Through colonial trade and migration, the birds made a complete circuit: European-descended domestic turkeys were later reintroduced to North America, where they contributed genetic material to emerging farm strains. This back-and-forth exchange laid the foundation for the breed diversity that would follow.
