Reading this book is like eating a very good vegetable soup. I don't mean that over-cooked stuff that sat on a store shelf for 6 months before you took it home and nuked it in your microwave. I'm talking about a real vegetable soup. It is a soup where you pick the vegetables fresh from the garden in the morning, chop them up, stir them together, add some chicken broth and a pinch of salt, and let it simmer on low for most of the afternoon. The vegetables are not overdone when serving, and a few may still be crunchy. Each chunk retains its original bright colors, so you want to look at each spoonful before you devour it. Every mouthful has a different texture, and as you bite into a chunk, you taste the fresh flavor of that individual ingredient. Of course, what binds it all together is the broth and the aroma. It provides balance and continuity spoonful after spoonful, so you have expectations with every bite, yet you are surprised by the unique flavors hidden within each one. But when you reach the bottom of the bowl, you aren't upset that the soup is gone because you feel comfortably satisfied.
