About the Author
Michael Eskin, a Distinguished Canadian Professor of Food Science, played a crucial role in the development of canola oil. This changed the agricultural landscape of Canada, making it the most profitable crop, accruing over 40 billion dollars annually to the economy. He has published 21 major scientific books, including the classic Biochemistry of Foods, now in its 4th edition. He is also known worldwide for his scientific raps on Utube. Dr. Eskin ls the recipient of many national and international awards for his major research contributions and was recently inducted into the Canadian Agricultural Hall of fame. Besides writing and performing satirical songs on different aspects of foods and nutrition, he also wrote a science fiction book dealing with the detrimental impact of man's harmful activities on the health and stability of planet Earth.
