Treating the evidence the way a pathologist treats a body, this is a forensic autopsy of the Roman street kitchen, phase by phase, from the warehouse to the counter to the stomach to the bone. It follows rancid oil back up a supply chain built for volume and not safety. It reads the legal record that ruled selling sour oil to the poor was no crime at all. It counts the parasite eggs in the soil beneath the food counters, weighs the lead in the wine, and names the enslaved workers who had no power to refuse any of it.
The verdict is not that the Romans were ignorant. They knew. Galen wrote it down. The state that could guarantee the grain dole simply never cared what its poorest citizens were actually being fed.
Every claim is built on real archaeology, real medical texts, and the real legal record, and it is honest about where the evidence runs out. This is history without the marble: rigorous, unflinching, and uncomfortably familiar. The architecture of harm it describes, poverty doing the regulator's job, has not gone anywhere.
