Ce livre majeur, fondé sur des archives en grande partie inédites, cherche à résoudre l'énigme. Steven Kaplan refait l'enquête, convoque les acteurs, interroge leurs hypothèses, et, en s'emparant de ce fait divers, raconte la France des années 1945-1958 - un pays encore vacillant après la guerre et sur le point de basculer dans la modernité triomphante des Trente Glorieuses. Il livre ici, avec un souffle digne d'un auteur de roman policier, l'histoire méconnue d'un secteur essentiel à notre économie et à notre culture: la meunerie et la boulangerie.
Steven L. Kaplan est professeur d'histoire européenne à Cornell University. Il fut le premier à faire du pain un objet d'histoire totale, au carrefour du matériel et du symbolique. Il est l'auteur de nombreux ouvrages de référence sur la France, notamment Les Ventres de Paris (Fayard, 1987), Adieu 89 (Fayard, 1993), Le Meilleur Pain du monde (Fayard, 1996), La Fin des corporations (Fayard, 2001) et Le Retour du bon pain (Perrin, 2002).
