This book examines the Michelin Guide's rating activity in mainland China since 2016 and its implications for China's efforts to endow its high-end gastronomy sector with global visibility and prestige. It explores how Michelin has handled the risks involved in rating restaurants within an unfamiliar culinary culture and dining environment, given its limited business networks and cultural understanding of China. The book systematically challenges Michelin's claim that the quality of cuisine can be compared across continents and that awards of stars are therefore comparable.
